While I am still not in love with the texture of any shirataki product, these definitely can work as a rice substitute for those of us watching our carbs.
I don't think I would use them in risotto, and right out of the bag they still have the same rubber texture, but after cooking them a bit, the texture mellows out. I made a stir fry and added them at the beginning of the process and by the time the dish was done they were full of flavor and way less rubbery.
Like the other reviewer I was happy to see there is no sulfur smell when you open the package and there is no endless rinsing needed, just a quick wash.
This will be the brand I buy from now on.This review is specific to Organic Shirataki, Rice
